Mini Pandan Chiffon Cake

I bought a mini bundt baking tray and wanted to try it out today. I know this is definitely not the correct tray for a chiffon cake, but who knows how it will turn out?

This is not my first time making chiffon cake, but it is my first time baking a pandan chiffon cake. I followed the recipe from Happy Home Baking, using pandan essence and pandan liquid that they sell in a can here. (I was too lazy to make pandan paste from scratch.)  Hence, I did not expect the pandan taste to really stand out. Still, the whole house has the aromatic smell of pandan and coconut milk.

Here goes…

Mini Pandan Chiffon Cake

I only dusted the tray with some icing sugar as recommended by the tray maker, and had to use a toothpick to loosen the mini cakes in the end. =P

The cakes tasted alright, but being so light and airy and small, it was gone in 2 bites.

I guess it’s back to the springform pan for my next pandan chiffon cake!
