Peanut Cookies

2 days to Chinese New Year, and I was feeling quite bored on a lazy afternoon. And so, I decided to churn out 100+ peanut cookies all by myself. Believe it or not, it’s my first time making this CNY goodie.

Some random thoughts after 2 hours of solitary man-hours:  1) I wished I had a bigger oven. 2) I need a blender to grind the peanuts into finer powdery form. 3) What exactly makes a delicious peanut cookie? Maybe I should have used some pork lard…(Gasp!) 4) What other goodies shall I make?  年糕?5) I missed the dishwasher. 6) So, how much can each cookie sell for? Can make money or not?

And that brings me back to Thought number 1 again.

Personally, I prefer the batch with the caster sugar over the one with icing sugar. The sugar crystals add a nice crunch, while the icing sugar tasted too artificial and powdery for my liking.
