Honey Cupcakes

My favourite past time of late – flipping through cookbooks. However, I always felt that the cookbooks here are limited and overpriced. Some years back, I actually spent the whole morning at Eslite in Taipei, trying hard to decide which books I should get.

There’s about 30 cookbooks on my coffee table now. Some I borrowed from the library, others I just bought from an online China website, which is downright cheap even with shipping. The books are now tagged with sticky notes for those recipes that I would love to try.

The honey cupcakes I made this afternoon is quite simple, with ingredients that anyone should have in their pantry – honey, eggs, flour, sugar and oil. However, you do have to spend a good 5 to 10 minutes using a hand beater to whip the eggs into the right texture.

In fact, I’m surprised the honey has such a distinct taste in the cupcake. It certainly makes a nice complement to a cup of coffee on a lazy afternoon.
